Our Brewing Journey

From the very beginning co-founders Troy and Rayma Dennis knew that this was
going to be an ambitious undertaking. To establish a craft brewery and tap room
with no prior experience in the industry.
Brewing was always a passion for Troy since his early twenties, however it wasn’t
until 2019 whilst travelling around Australia with his wife Rayma, she said to Troy
‘Let’s open a craft brewery’. Troy, trying to hide his excitement at this possibility,
softly replied ‘OK’.
Following corporate careers spanning across two decades, Rayma and Troy
wanted to dedicate the second half of their working lives towards something they
loved and were passionate about. The passion of making great craft beer in a
beautiful location.

Originally from Melbourne, their careers gave them the opportunity to live and
work abroad before returning home and to see more of their home country. On
their travels both internationally and around Australia they had the opportunity to
visit many fantastic venues offering craft beer.

The first task was to find “THAT” location. Being impressed with so many possible
locations, the duo landed on the shores of the Copper Coast in late Spring 2019.
The place just felt right so they decided to stay….
They knew there was a lot of pre-work that had to be done if they were going to
make this a reality. The first step was to get educated in brewing and practice,
practice, practice!
Troy completed a qualification (Certificate III in Brewing) at Tafe SA’s Regency Park
campus and got hands-on experience brewing in a full-scale commercial
microbrewery located on-site at campus. Alongside his studies Rayma and Troy
designed and set-up a comprehensive 50 litre Nano Non-commercial Brewery in
their back shed at home and called it “Pilot Brewing”.
They originally set out to brew 50 different beer styles and to decide on the range
of beers to be showcased on a regular basis in the brewery.

This quickly turned into over 100 brews and a series of pop-up events across the
Copper Coast region to promote Hedonabar Brewing before opening their brewery and taproom in March 2023.

This gave them the opportunity to put it all into practice, working on refining their
operational procedures and craft beer recipes as well as market testing their
beers and seeing what was popular.
